Chinese Sandwich Style Steamed Bun with Crispy Mushrooms

This dish is inspired by guabao which contains meat that has been boiled with typical Chinese spices. In this steamed bun I want to create a soft texture from the bun itself, fresh from the vegetables and creamy sensation from sesame sauce, this food is perfect for breakfast or brunch because it is not too heavy for the stomach but enough to fill you up!

THE BUN RECIPES

Starter Ingredients :

  • 350g low protein flour
  • 200ml cold water
  • 1 tbsp sugar
  • 3g yeast

Mix the above ingredients until they form a solid dough, cover with plastic wrap, leave for 2 hours at room temperature or overnight in the refrigerator.

Main Ingredients:

  • 150g low protein flour
  • 100g sugar
  • 3g yeast
  • 50g tengmien flour
  • 50–75g cold water (50g first, add a little water if the dough is still dry)
  • 6g double acting baking powder
  • 5g salt
  • 75g white butter

Directions:

1. Mix the starter ingredients with the main ingredients except the white butter and salt until almost smooth.

2. Add the white butter and salt until smooth elastic texture.

3. Weight the dough @ 50g (according to each taste) round it off, cover with plastic wrap and let stand 10–15 minutes, give the base with paper.

4. Let the dough rise for about +/- 45 minutes to 1 hour from the first time it is shaped.

5. Steam for 10–12 minutes depending on the size of the bun, make sure the water is boiling before adding the dumplings. Steam with steamer, do not let the steaming water drip.

CRISPY MUSHROOMS RECIPES

Ingredients:

  • Some fresh oyster mushrooms
  • Seasoned flour

Directions:

1. Wash the mushrooms thoroughly under running water.

2. Squeeze the mushrooms so that the water content is reduced by half.

3. Cover with seasoning flour while pressing the mushroom.

4. Deep fried over high heat until the mushroom color turns golden brown.

SERVING METHOD

Ingredients:

  • Lettuce
  • Cucumber
  • Tomato
  • Sesame sauce
  • Hot sauce

Directions:

1. Spread sesame sauce and hot sauce on the inside of the bun.

2. Stack with fried mushrooms and vegetables.

3. The steamed bun is ready to be served.
