Javanese Brown Sugar Roasted Chicken
This brown sugar roasted chicken is my mother’s recipe. I always make it when I miss my hometown. The taste is sweet, savory, slightly spicy, very suitable to be paired with warm rice. The cooking process is a bit long, but it’s worth trying because of the taste that will make an impression on the heart.
Ingredients:
- 1.5kg Chicken thighs
Ground Spices Ingredients:
- 12 cloves of red onion
- 3 cloves of white garlic
- 1 Ginger knuckle
- 1 Knuckel galangal
- 10 Curly red chilies
- 3 Orange chilies
Other Spices Ingredients:
- 5 Lime leaves
- 2 Bay leaves
- 3 crushed lemongrass
- 10/13 tbsp Sweet soy sauce
- 2.5 Java brown sugar shells
- Salt
- Powdered chicken stock
Directions:
1. Wash the chicken and then add a little salt and lime.
2. Blend all spices and then pour into a hot pan.
3. Add the remaining seasonings including soy sauce, brown sugar, salt and powdered chicken stock.
4. Put in the chicken.
5. Give 200ml of water, then cook until the water runs out and the spices are thick and the chicken is perfectly cooked.
6. Bake the chicken on a pan that has been covered with a sieve for 1 hour over low heat, or it can be roasted in the oven or coconut charcoal.
